Berries and Chocolate



Growing up with my parents meant learning how to say thank you. You say thank you when someone passes you the broccoli at the table, you send a thank you card when given a gift, and when someone goes out of their way to really do something nice, you say thank you in style, like this platter of berries and chocolate.


My mom really wanted to say thank you to a local dental office after they went above and beyond to beautify her smile. We put our heads together and decided on a platter of fruit and chocolate. Costco had a gorgeous selection of Rainier cherries, strawberries and blackberries, so we went with those. We then set to work making Funfetti cakeballs, raspberry cheesecake bites, and Ghiradhelli brownie bites (from the boxed mix).

It turned out to be a really fun platter to deliver, and it was definitely a crowd pleaser. You could do something like this for a shower, a party, or a fun way to surprise a loved one. And of course, it's a wonderful way to say thank you!

Lemon Blueberry Buttermilk Cookies



As I've mentioned in the past, my husband is a dental student out here in Philly. Because of this, virtually all of our friends are students as well, all of us away from family, and most of us experiencing the east coast for the first time. It's really nice because we can all sympathize with each other when we get homesick, or when we're feeling exceptionally poor that day. We all rely on each other for babysitting, support, or even just a shoulder to cry on. For four years, they ARE your family and we become very close.



The hard part about having student friends is that every year you have to say goodbye to a fraction of them who are lucky enough to be graduating and moving on. It's always sad, but it's also so exciting for them to reach that next step. About a month ago we had a big bbq for the families leaving. It was a lot of fun and a good chance to give hugs and well wishes. Everyone contributes to the potluck and there is always lots of good food.



These were my contribution, I found these cookies on Maria's blog Two Peas and Their Pod. I love Maria's blog, her food is so beautiful and fresh and there is NO shortage of cookie recipes, this girl can bake! Simple Yogurt Parfaits



I worry a lot about what I feed my kids. Living in a world where exercise is limited for kids, and junk food is widely available, I like to do as much as possible to keep them healthy and active. One of my hardest times is when my daughter comes home from school absolutely starving. I'm always on the lookout for healthy snacks that won't fill her up too much before dinner.


This particular snack was a total hit, and super easy. Just any flavor of yogurt, layered with any type of fruit and granola. And since my daughter is quite fancy, the pretty cup didn't hurt either. It's such a simple idea that I'm almost embarrassed to post it, but if you're in the same boat as me, you're up for any snack ideas. So I'll ask you guys...

Semi-Homemade Raspberry-Lemon Cheesecake Bites



Why do I love mini food so much? Is it because I'm mini? At 5'0, I rarely get to look others in the eye. Is it because I have mini kids? Or maybe mini food makes me feel better about eating ten? Regardless of what it is, the smaller food is, the happier it makes me.


This idea came after making those mini quiches. The little pie crusts were so easy to make that the possibilities became endless. Then I discovered that you can buy premade cheesecake filling that requires no baking.



That combined with a layer of lemon curd, and a bright raspberry, and you have one (or ten) tasty little bite!

Semi-Homemade Raspberry-Lemon Cheesecake Bite

Ingredients (Makes 48)

2 refrigerated rolled pie crusts
1 tub cheese cake filling
1 jar lemon curd
1 container of raspberries, washed (just about any berry would work)

Directions

Preheat oven to temperature on pie crust box. Unroll pie crust, flour on either size and roll out to almost twice it's size. Use a round glass or biscuit cutter to cut out circles to fit a greased mini muffin pan. Bake according to directions. (You'll do this twice). Allow to cool.

Fill each pie crust with cheesecake filling, a layer of lemon curd and top with one berry.

Roasted Butternut Squash Salad with Blue Cheese Vinaigrette



It's gorgeous today! The sun is shining, the wind is minimal and I didn't even need a jacket when I went outside. I can't wait for my daughter to get home because as soon as she does, we're packing up and spending the rest of the day at the park. I love days like today!

And on a beautiful spring day, you need a beautiful green salad. I found this salad on Natalie's blog, The Sweets Life. This girl knows her stuff, especially when it comes to beautiful healthy food. As soon as I saw this salad, I knew I had to have it. In my mind, it's perfect for spring because it's got the summery crispness of the leafy lettuce or spinach, but also the winter nostalgia of creamy butternut squash and dried cranberries. Combine that with crispy bacon and an incredible homemade blue cheese vinaigrette, and you have yourself springtime on a plate! Thanks Natalie, I will be enjoying this salad a lot! Happy Valentine's Day!



Happy Happy Day of Love my friends! Throughout my life, Valentine's day and I have gone through a wave of good times and bad.

It's great when you're six and collecting sugar filled Valentine's from your friends.

Bad when you're sixteen, single and watching all of your friends take home flowers from their boyfriends.

Amazing when you're nineteen and have found the love of your life that you plan to spend forever and ever with.

Horrible when you're twenty one and realize that plans have changed.

And it's elating when you're twenty-eerhf and you wake up to the man and children that really have become your forever and ever. I still don't know how I got so lucky to have such a sweet family, I just love them!

But being the broke students that we are, Valentine's day is one holiday that we don't celebrate much. Usually a nice dinner suffices. And after visiting some amazing food blogs for ideas, here is what I plan to make.

Kim, one of my favorite blog friends from Stirring the Pot, completely knocked my socks off with this Triple Pork Split Pea Soup. Thick flavorful bright soup filled with three different kinds of pork. And as you'll remember, I do love pig!



I just barely met Megan from Food and Whine, but I already love her blog. She has these fun Jello Hearts that I know my kids will go nuts for.


And for dessert I turned to Deborah from Taste and Tell, who devoted some time experimenting with red velvet. It was so hard to choose what to choose from her lineup, but I finally decided on these Red Velvet and Strawberry Trifles because my daughter loves strawberries. How pretty do they look!


And that is how I will be spending my evening with the people that I love. I hope you all have a wonderful day with your loved ones too!

Lemon Blueberry Muffins




Sometimes cold and rainy days are great. You put on your comfies, a sit down to a nice movie or book and enjoy the warmth of your home. Buuuuut then you have days where the weather couldn't have picked a worse day to be cold and rainy. The kids are climbing the walls, trashing the house with every second and driving me absolutely insane. That's when recipes like this are huge life savers. I found this on Recipe Shoebox, a fabulous blog that you should go check out asap. As soon as I found it, I ordered the kids into the kitchen and got to baking. Muffins are so fun to make with kids, they're not complicated, but there are enough steps involved to keep them busy for a while.

The best part is not only are these a snap to make, they are INSANELY delicious. And this is coming from a person that doesn't usually go running to the muffin table. So soft and moist with the best flavor. Lemons and blueberries really were meant for each other. Two days and these bad boys were gone. I can't wait to make them again. Thanks Lara, you saved us on a rainy day!


Lemon-Blueberry Muffins
From the Recipe Shoebox.

Ingredients

2 cups flour (I used King Arthur's white whole wheat flour)
1 cup sugar
1 Tbs. baking powder
1 tsp. salt
6 Tbs. cold butter, cut into 6-pieces
1 egg
2/3 cup milk
1 Tbs. fresh lemon juice
1 tsp. grated lemon rind
1 tsp. vanilla
1 cup fresh or frozen blueberries (do not thaw)

TOPPING I never did the topping, just covered the top in raw sugar. I imagine the topping is wonderful though!

2 Tbs. flour
2 Tbs. sugar
2 Tbs. melted butter
1/2 tsp. ground cinnamon

Directions

Preheat oven to 400°. In a large bowl, mix flour, sugar, baking powder, and salt. With a pastry blender or 2 knives, cut in butter until mixture resembles fine crumbs (you want to be able to see small pea-sized clumps of butter still). In a separate smaller bowl, lightly beat together egg, milk, lemon juice, lemon rind and vanilla until blended. Stir egg mixture into flour mixture until just blended (do NOT overmix). NOTE: Batter will be somewhat thick.

Fold blueberries into batter. Spoon batter evenly into well-greased muffin pan.

For topping, in a small bowl, combine flour, sugar, melted butter, and cinnamon until well blended. Spread mixture evenly over tops of muffin batter.

Bake for 15-20 minutes at 400°. Muffins should be golden brown. Serve warm. Makes 12 standard size muffins. Enjoy!

Strawberry Bundt Cake With Lemon Glaze


I always feel a bit like a cheater whenever I make something out of a boxed mix, especially cake. I mean, c'mon, we all do it, but I always feel that little voice in the back of my head squealing "you could be making this from scratch you lazy bum!"

That's why I'm grateful for recipes like this. It's been completely dolled up as a lovely homemade strawberry cake, swimming in sweet lemon glaze, just begging to be soaked up and licked off the plate. No one needs to know that it took about two minutes to mix up and cost about five dollars. It can be our little secret.



Strawberry Bundt Cake with Lemon Glaze

Ingredients

Cake
1 (18 1/4 ounce) box strawberry cake mix (Duncan Hines Moist Deluxe)
1/3 cup vegetable oil
1 cup water
3 large eggs
2 tablespoons sour cream (heaping tablespoons)
2/3 cup strawberry (either fresh strawberries pulsed a few times with food processor or strawberry pie filling drained w)
1 dash cooking spray (Bakers Joy works best)

Lemon Glaze
1 3/4 cups powdered confectioners' sugar (or 2 cups if thicker texture desired)
5 tablespoons fresh lemon juice

Directions

1.Preheat oven to 350 degrees. Spray Bundt or tube pan with Bakers Joy (or spray two 8" pans with cooking spray to make layer cake).

2.Blend together cake mix, oil, water, eggs, and sour cream in large bowl on low speed for 1 minute then medium high speed for 2 minutes.

3.Pulse strawberries a few times until chopped (be careful not to puree them) then stir those into batter by hand then pour batter into Bundt pan (or round pans).

4.Bake for 35-40 minutes for bundt pan until done (bake 30 min for round pans). Remove from oven & let cool in pans on wire rack for 15 minutes before removing from pan.

5.Cool completely then glaze by combining the powdered sugar & lemon juice - whisk together until creamy then drizzle over top and sides of cake.

Chocolate Bundles with Chocolate Sauce





This dessert totally reminds me of my daughter. She is as girly as a four year old girl can be. She once told me that she didn't need makeup because her face is still too fancy! She loves to twirl in pink fluffy skirts and pretty shoes. The best day of her life is when she gets her hair done or nails painted. And her favorite Disney princess is...all of them!


So the reason this dessert reminds me of her is because it's what I would consider a "fancy" dessert. Buttery puff pastry wrapped around oozy chocolate and peanut butter in a shape that resembles a little handbag. It's then adorned in whipped cream, chocolate ganache and strawberries. As Fancy Nancy would say, Magnifique!


But, here's the real kicker to these precious little treats, they take about five minutes to make, and require only a few simple ingredients. There is no trick to them, no intricate technique or unattainable ingredient. In fact, I kind of just threw them together, I was in a hurry! The perfect dessert, good enough for all of us princesses!

Chocolate Bundles with Chocolate Sauce

Ingredients

For the bundles:
•1 sheet frozen puff pastry, thawed
•2 eggs
•1 teaspoon whipping cream
•8 chocolate drops (recommended: Hershey's kisses)
•8 miniature chocolate candy bars (I used Reeses mini cups)
For the chocolate sauce:
•1/2 cup heavy cream
•4 ounces milk chocolate, broken into small pieces
•Sweetened whipped cream, optional
•Fresh strawberries, sliced, for garnish
•Mint sprigs, for garnish

Directions

Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.

For the bundles:
Allow the puff pastry to thaw, covered, for 30 minutes at room temperature. When it is pliable, unfold puff pastry and cut the sheet into 4 squares

Beat the eggs and cream together to create an egg wash. Brush the entire surface of each pastry square with egg wash. In the center of each pastry square, place 2 chocolate drops and 2 miniature candy bars. Pull the corners of each square up around the chocolate, and twist the top of the dough clockwise to complete the "bundle." Brush the exteriors of the chocolate bundles with more egg wash.


Place the bundles on the cookie sheet. Bake for about 35 minutes, until golden brown.

For the chocolate sauce:
In a small saucepan bring the heavy cream to a boil. Place the chocolate pieces in a bowl and pour hot cream over the top. Whisk until the sauce is smooth.


Puddle the chocolate sauce on each plate and place a bundle on top. Top with whipped cream and additional chocolate sauce, if desired. Serve the bundles garnished with strawberry slices and mint sprigs.

I made these to share with my foodie friends Alissa and Sara. In return Sara shared with us her delicious pasta with sage and browned butter. Alissa brought along an incredible watermelon salsa, both dishes I could not keep my fork out of! Be sure to keep an eye on their blogs for the recipes!

CEiMB:Dark Chocolate Mousse




Update: It's been a few days since I've eaten this, and I don't know if I'm just in a better mood, or if sitting for a while has helped, but I'm really growing to LOVE this mousse. It's almost gone, and I'm getting a hankering for some more!
This is another treat to indulge your sweet tooth when you're trying to be healthy, sort of. I have very mixed feelings about this dessert. It's pretty, it's chocolatey, it's rich, and you can reeeeally taste that tofu. So, if you are a fan of all of the above this is the dessert for you! If not, you may just want to stick with chocolate pudding.

HBi5: Red Beet Cheese Buns and Chocolate Cinnamon Bread


Happy Valentine's weekend! I really love Valentines Day. I love the aisles at the store that are full of pink and red. And I think it's great that we have a day to celebrate love, which according to John Lennon, is all we need!


The breads for this week were chosen wisely as they both reflect the holiday in different ways. The red beet buns were an obvious for their red color. I'll be honest, I wasn't that excited about this particular bread, but my curiosity kept me from skipping it. As it turns out, this has been my favorite so far! Of course the fact that I stuffed the buns full of cheese probably helped, but seriously, I loved the red "beety-onion-y" flavor of this bread. And the best part...my veggie/fruit hating son ate about three of these! (evil laughter...you're eating beets little boy!)

I made the dough per the instructions, and when it came time to bake them, I rolled the dough out to about an inch thickness, and spread garlic powder, Parmesan, mozzarella and sharp provolone. I rolled it up jelly style, sliced and baked. Pretty much like a savory cinnamon roll. The only downside is that the dough made my fridge smell pretty funky, but it was worth it. I'll be making this again!


The second bread was supposed to be a chocolate-espresso combination, but neither of us are coffee drinkers, and my husband finds the flavor of coffee abominable. So, instead I added a good helping of ground cinnamon for a nice subtle bite to the bread. Before baking the bread I worked in some extra chocolate chunks, the zest of an orange and some dried cherries and cranberries. It came out a very fun and pretty loaf of bread, but I wasn't too crazy about the taste. Since it's still a yeast bread, it never got too sweet and lacked a bit in flavor. It's basically something that you have to turn INTO a dessert. So I did what any sensible chocolate lover would do, smothered it in Nutella and strawberries. Now we're talking.



I think this bread has a lot of possibilities for a lot of fun desserts, however, I don't see myself making it again. I just think if I'm going to spend my calories making and eating a dessert, it's going to be something a little less...uh healthy!

Fruit Pizza


This was another treat we got at my mom's house. She has been making these as long as I can remember, and as far as I know, no one makes them as pretty and as delicious as she does. Her cookie base is more then just a sugar cookie, it is a chewy, but crispy, oatmeal cookie, that could easily stand alone on it's own. The "sauce" for the pizza is so sweet and creamy, a perfect blank palate for any fruit that is in season. I took this over the summer time, so obviously berries were an appropriate choice. Right now, peaches and pears would be wonderful, or even apples, cut up in chunks and sprinkled with cinnamon and sugar.

You can arrange the fruit on the pizza and then serve, or you could leave it empty with just the sauce and allow people to pile on the fruit of their choice. Either way, this pizza will be an absolute hit!

Fruit Pizza
Recipe provided by my amazing mom!

Ingredients

COOKIE:
3/4 c soft margarine
1/2 c sugar
1/2 c brown sugar
1 egg
1 t vanilla
1 2/3 c flour
1 t soda
1 1/3 c quick oats
dash salt
SAUCE:
1 small pkg instant vanilla pudding
2 c milk
8 oz softened cream cheese
Stir in
1 c Cool Whip
1 c powdered sugar

Directions

COOKIE:
Beat margarine. Beat in sugars, egg & vanilla. Beat well. Sift flour, salt & soda and add to creamed mixture. Mix well. Stir in oats. Chill 1-2 hours or overnight. Roll (pat) evenly onto hot pizza stone. Bake 350 for about 15 minutes. Loosen from pizza stone and cool.

"SAUCE:"
Mix and beat well:
Spread over cooled crust and top with a variety of colorful fruits! I macerate all the fruit I top the pizza with. I think pizza is best after sitting for awhile, allowing topping to integrate with cookie crust.

Crunchy Cranberry Muffin Tops


To my absolute delight, my daughter is becoming a little food lover herself. The other day she made me a "salad" which consisted of crushed graham crackers, mixed with orange juice, topped off with some carrot sticks...mmmm. What do you do when your little girl comes up to you with those huge blue eyes and asks you to taste it? So I sucked it up, put on my best acting skills and went in for the kill. It did not. taste. good. However, there was no way I was going to break her little heart by not telling her it was the best salad I've ever had in my life, but I am so full that there is no way I can handle another bite of anything right now!

So after telling my mom about this, she was sweet enough to send my girl her own cookbook of recipes made for kids. It's a William Sonoma cookbook, and I love it because they are easy recipes, but they are also things that I actually want my kids to eat. My daughter loves the cookbook, and I often catch her sitting on the couch leafing through it, makes a mama proud! These muffin tops were the first thing we tried together and they were such a hit. I love the hearty flavor of cornmeal and addition of dried cranberries made them delicious. Great job princess!



Crunchy Cranberry Muffin Tops

Ingredients

2 cups flour
1 1/4 cups cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
2/3 cup milk
2/3 cup buttermilk
4 tablespoons melted butter
1/4 cup honey
1 cup dried cranberries
1 teaspoon grated orange zest

Directions

1. Preheat oven to 375. Line 2 rimmed baking sheets with parchment paper.

2. In a large bowl, stir together the flour, cornmeal, baking powder, baking soda, and salt. In a medium bowl, whisk together the eggs, milk, buttermilk, butter, and honey. Add the egg mixture to the flour mixture and stir until combined. Stir in the cranberries and orange zest and mix well.

3. Drop the batter by large spoonfuls onto the prepared baking sheets, placing them well apart.

4. Bake until golden, about 15 minutes. Transfer to a rack to cool for 4 minutes. Serve warm with honey.

Strawberry Banana Trifle



I went to the park today with my kids and the air had that beautiful fall crispness to it that felt so good. I love summer, but I really love fall, so I'm welcoming it with open arms. However, I have loads of summer recipes from the previous months that I really want to share before it's too late!

I think trifles are fun. I love assembling them with their colorful and delicious layers that look so pretty when it's all put together. It's an impressive looking dessert that requires little effort, my favorite kind!

Strawberry Banana Trifle
Found in Taste of Home, Picnics, Potlucks and BBQs

Ingredients

1 cup sugar
1/4 cup cornstarch
3 tablespoons strawberry gelatin powder (Jello)
1 cup cold water
1 pint fresh strawberries, sliced
1 3/4 cup cold milk
1 package (3.4 oz) instant vanilla pudding mix
3 medium firm bananas, sliced
1 tablespoon lemon juice
6 cups cubed angel food cake
2 cups heavy whipping cream, whipped
additional strawberry and banana slices for garnish

Directions

1. In a saucepan, combine the sugar, cornstarch and gelatin; stir in water until smooth. Bring to a boil; cook and stir for two minutes or until thickened. Remove from the heat. Stir in strawberries; set aside.

2. In a large mixing bowl, combine milk and pudding mix. Beat on low speed for 2 minutes, set aside. Toss bananas with lemon juice, drain and set aside.

3. Place half of the cake cubes in a trifle bowl or 3-qt serving bowl. Layer with half of the pudding, bananas, strawberry sauce and whipped cream. Repeat layers. Cover and refrigerate for at least 2 hours. Garnish with additional fruit if desired.

Strawberry-Shortcake Cookies




Of all the baked goods out there, I'm pretty sure that cookies have always been my favorite. They are so dense with rich concentrated flavor that I can never seem to get enough of. I love cookies of all kind, and I don't know if I will ever be able to proclaim any cookie as being my favorite cookie. However, if I HAD to choose a favorite, there is a very good chance that these cookies would come to mind very quickly. I found these on Elizabeth's blog at Elizabeth's Edible Experience. She is always impressing me with her delicious recipes, and takes fantastic pictures, go check her out!

Oh my goodness, how I loved these cookies. I don't think I'll be able to make them often because these are they type of cookies that you want to make a meal of. They are so flaky and light, with a sweet strawberry taste and and are so visually appealing. Elizabeth suggests that you make them the day that you plan to eat them because they are a bit mushy the next day. So instead of baking the whole batch, we baked half of it one day, and then the other half the next day, and the dough itself seems to hold up pretty well overnight. I LOVE these cookies!

Strawberry-Shortcake Cookies

Ingredients

12 ounces strawberries, hulled and cut into 1/4-inch dice (2 cups)
1 teaspoon fresh lemon juice
1/2 cup plus 1 tablespoon granulated sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon coarse salt
3 ounces (6 tablespoons) cold unsalted butter, cut into small pieces
2/3 cup heavy cream
sanding sugar, for sprinkling

Directions

1. Preheat oven to 375 degrees. Combine strawberries, lemon juice, and 2 tablespoons granulated sugar. Whisk together flour, baking powder, salt and remaining 7 tablespoons granulated sugar in a large bowl. Cut in the the butter with a pastry cutter, or rub in with your fingers, until mixture resembles coarse crumbs. Stir in cream until dough start to come together, then stir in strawberry mixture.

2. Using a 1 1/2 inch ice cream scoop or a tablespoon, drop dough onto baking sheets lined with parchment (definitely use the parchment paper or a silpat, otherwise they're going to stick like crazy), spacing evenly apart. Sprinkle with sanding sugar,and bake until golden brown, 24 to 25 minutes. Transfer to a wire rack, and let cool.


Strawberry-Avocado Salad



I've said it before, and I'll say it again. I love summer food! I love the freshness, the bright flavors and colors, and the fact that it's just feels cleaner and healthier. Don't get me wrong, nothing could ever replace my warm bowl of stew or dumplings when the weather is cold, but there is just something so great about a nice summer salad.

I bought some beautiful strawberries the other day, and if I've learned anything about berries, it's that you pretty much need to make sure they are eaten within twenty four hours of purchasing them, otherwise you may end up with the tragedy of them going bad before enjoying them. So I thought they would be delicious in a big green salad. I sweetened the strawberries with a bit of Splenda beforehand, just to really get the full contrast of sweet strawberries and tangy balsamic vinaigrette. And I know I put avocado in EVERYTHING, but it was the perfect creamy mediator between the two flavors. And for an extra treat, candied almonds to top it off! I really enjoyed this salad, never once missed the meat and felt so good when I was done. Ah, summer!

Strawberry-Avocado Salad

Ingredients

romaine lettuce
baby spinach
strawberries, sweetened if desired
avocado
balsamic vinaigrette
candied almonds (Combine sliced almonds with a few teaspoons of sugar in a dry saute pan, place on medium heat. Stir with a wooden spoon until sugar melts completely over almonds, remove from heat.)

Directions

Toss your leaves with desired amount of dressing. Top salad with remaining ingredients and enjoy!

Lemon Curd Marbled Cheese Cake


I really wish I could take credit for this thing of beauty, yet alas, the credit for this marvelous cheesecake goes to another friend of mine. My only regret is that I didn't get a picture of the whole thing, it's so pretty.

I like cheesecake, but I don't love it. Usually it's too thick, or it's too rich and I can't eat much of it. But I could honestly eat this cheesecake all day and then dream about it at night. It has the perfect consistency, it's rich, but not overwhelming, and don't even get me started on how much I love the lemon/berry combination.


This recipe comes from Epicurious.com, and my friend clued me in on a few changes. She didn't add salt to the crust, to keep it from tasting like a pretzel (as some reviewers claimed it did). She also changed the baking time to a full hour, turned off her oven and let it sit for 20-30 minutes. She said to bake until the outer edge is firm and the center is wobbly. She also said that it's very important to run your lemon curd through a sieve to get out any lumps or rogue pieces of zest. Thanks again lady, it was to die for!

Lemon Curd Marbled Cheese Cake

Ingredients

For lemon curd
1 teaspoon finely grated fresh lemon zest
1/2 cup fresh lemon juice
1/2 cup sugar
3 large eggs
1/2 stick (1/4 cup) unsalted butter, cut into small pieces

For crust
1 1/3 cups finely ground graham cracker crumbs (5 oz)
1/3 cup sugar
3/4 teaspoon salt
5 tablespoons unsalted butter, melted

For filling
3 (8-oz) packages cream cheese, softened
1 cup sugar
3 large eggs
3/4 cup sour cream
1 teaspoon vanilla
Special equipment: a 9- to 91/2-inch (24-cm) springform pan
Accompaniment: blueberries (or any berry you prefer)

Directions

Make lemon curd:
Whisk together zest, juice, sugar, and eggs in a 2-quart heavy saucepan. Add butter and cook over moderately low heat, whisking frequently, until curd is thick enough to hold marks of whisk and first bubbles appear on surface, about 6 minutes.

Force lemon curd through a fine-mesh sieve into a wide shallow dish, scraping bottom of sieve, then cover surface with wax paper. Cool completely, stirring occasionally, about 30 minutes.

Make and bake crust:
Put oven rack in middle position and preheat oven to 350°F. Invert bottom of springform pan (to make it easier to slide cake off bottom), then lock on side. 3Stir together crust ingredients in a bowl, then press onto bottom and 1 inch up side of springform pan. Place springform pan in a shallow baking pan and bake 10 minutes, then cool crust completely in springform pan on a rack.

Make filling and bake cheesecake:
Reduce oven temperature to 300°F.

Beat together cream cheese and sugar in a bowl with an electric mixer at medium speed until smooth, 1 to 2 minutes. Reduce speed to low and add eggs 1 at a time, beating until incorporated. Beat in sour cream and vanilla until combined.

Pour two thirds of cream cheese filling into crust, then spoon half of lemon curd over filling and swirl curd into filling with a small knife. (Avoid touching crust with knife to prevent crumbs getting into filling.) Repeat with remaining filling and curd.

Bake cheesecake until set 1 1/2 inches from edge but center trembles when pan is gently shaken, about 45 minutes. (Center of cake will appear very loose but will continue to set as it cools.) Transfer springform pan to a rack and immediately run a knife around top edge of cake to loosen. Cool completely, about 2 hours, then chill, uncovered, at least 4 hours. Remove side of springform pan before serving.
